2019 Domaine Pavelot - Savigny les Beaune Aux Gravains (750ml)

Domaine Pavelot is a family estate based in Savigny-lès-Beaune, today run by Jean-Marc and Hugues Pavelot, who farm roughly thirteen hectares spread across the commune and its immediate neighbors. Rather than concentrating on a single flagship wine, the domaine bottles several distinct climats separately, including Aux Gravains, La Dominode, Les Peuillets, and Les Lavières, giving drinkers a clear window into the range of terroirs found within Savigny-lès-Beaune. The style favors ripe, generous fruit balanced by the appellation's characteristic earthiness and structure.

Aux Gravains takes its name from the gravel, or graviers, that runs through its light topsoil on a gently sloping, south-facing site. Pavelot farms about 2.2 hectares within the climat, with roughly seventy percent of the vines around eighty years old and the remainder closer to forty. The wine matures about twelve months in barrel, with around a quarter new oak, and total production runs to around five thousand bottles.

The 2019 pours a deep garnet color and offers ripe dark currant and plum fruit layered with the earthy, mineral edge typical of Gravains. The texture is elegant and well balanced, with fine tannins and a structure that suggests real aging potential over the coming years.
