La Dominode is the Pavelot family's flagship holding and widely considered the finest cru in Savigny-lès-Beaune — a steep, southeast-facing slope with old vines (many over 60 years) on iron-rich, stony soil that gives the wine real depth and structure well beyond typical Savigny. The 2019 shows the ripe, concentrated character of the vintage layered over La Dominode's signature savory, mineral edge: dark cherry, blackcurrant, licorice, and a touch of smoky earthiness, with a full-bodied, powerful palate, firm tannins, and real aging potential. Often described as punching at premier cru Beaune or even Volnay level — a serious, cellar-worthy Burgundy from an old-school, meticulous producer.

There is very fine mid-palate density with an abundance of sappy dry extract to the velvety and mouth coating flavors that flash good minerality on the powerful, balanced and hugely long finish. This is marvelous but it's also a buy and forget you own it wine."
