2019 Silverthorn - Cap Classique Jewel Box Robertson (750ml)
Silverthorn's story began when Karen Loubser's family bought their Robertson farm in 1976, but it was Karen and her husband John who transformed it, taking over in 1999 and committing the estate entirely to Méthode Cap Classique soon after. John, a Cape Winemakers Guild member since 2004, and Karen, who has run the winery's daily operations since 2006, built Jewel Box as their flagship prestige cuvée, conceived with the great houses of Krug and Bollinger in mind.
The 2019 vintage blends 70% Chardonnay with 30% Pinot Noir, hand-picked in the early hours of late January. A portion of the wine underwent barrel fermentation and completed full malolactic conversion, while a share of reserve wine was folded into the final blend for added depth. The wine then rested on its lees for roughly four years, a long maturation that builds richness and complexity well beyond typical Cap Classique aging.
Light straw yellow with a fine, persistent bead, the wine offers roasted almonds, marzipan, and cherry compote layered with citrus zest and a touch of brioche. The palate is dry, rich, and full-bodied, with a creamy mousse and a long, elegant finish. Serve it with fresh shellfish or a rich seafood bisque.
