Bononia Estate sits at the site of an ancient Roman fortress along the banks of the Danube in northern Bulgaria, on a property that once housed one of the country's earliest breweries before falling into disuse. The Yotov family revived the site in 2013, building a modern winery dedicated to both international and native Bulgarian grapes, and the estate has since earned recognition as one of the region's most notable producers, including a spot on the World's Best Vineyards Top 100 list.

The Istar Cabernet Franc comes from vineyards planted in 2013 using the Guyot training system, just south of the Danube. The river's breezes and fast-moving current help keep the fruit cool during the growing season, while well-drained, dark loam soils shaped by ancient forests support the vines. Farming follows organic practices, and after harvest the grapes ferment and macerate in temperature-controlled steel before the wine spends time in oak to soften and round out its structure.

The finished wine is full-bodied and juicy, with intense aromas of wild strawberry and blackberry layered with vanilla and warm spice. Soft, ripe tannins carry through to a lingering, gently spicy finish. It suits cured meats, hard cheese, or a simple pasta dish.
