Les Dolomies takes its name from the magnesian limestone that makes up much of its parcels, and it was founded in 2008 in Passenans, in the Jura, by Céline Gormally with the support of her husband, Steve. The couple began with a single 1.44-hectare plot and now farm organically, using biodynamic preparations. Between 2018 and 2020 they were advised by Jacques Néauport, a disciple of the natural wine pioneer Jules Chauvet.

Malgré Tout, meaning "despite everything," was born of a difficult 2021, when hail, frost, and mildew slashed yields. Rather than bottle separate cuvées, the couple blended all their remaining Chardonnay and Savagnin from calcareous marl soils into one wine, released only in magnum. As is customary at the domaine, the wine was topped up during fermentation, keeping it fresh and mineral rather than oxidative. It is bottled unfined, unfiltered, and with no added sulfur.

Delicate white fruits and white flowers lead the aromas, with hints of almond, fresh hazelnut, and exotic fruit adding complexity. The palate is graceful and strikingly mineral, and the wine can be enjoyed in its youth.
