2021 Piaggia - Carmignano DOCG Il Sasso (750ml)
Sourced from the distinct iron-rich clay and limestone soils of Santa Cristina a Mezzana, Piaggia’s 2021 Il Sasso captures the classic structural balance expected of Tuscany’s Carmignano DOCG appellation.
Family-operated since its founding in 1991, the estate concentrates roughly fifteen hectares around Poggio a Caiano to produce this site-specific bottling. The blend anchors Sangiovese precision with strategic additions of Cabernet Sauvignon, Cabernet Franc, and Merlot. After harvesting, the fruit ferments with indigenous yeasts through a three-week skin maceration, extracting phenolic depth before resting in French oak barriques for fifteen months followed by extended bottle aging to round out the tannic frame.
Tasting Notes:
The aroma profile reveals crushed ripe plum, fresh sage leaves, and a delicate balsamic spice lift. The palate mirrors this complexity with firm yet polished tannins supporting layers of crisp wild berry, dark cherry, and a guiding note of tangerine zest. Integrated acidity keeps the wine focused rather than heavy, carrying through to a persistent finish layered with dried violet and ripe blackberry compote. Decant thirty minutes before serving to allow the barrel-aged structure to open.
Suggested Foods to Serve With:
A medium-weight red built for savory richness, this bottling pairs cleanly with roasted duck breast, charred venison loin, and slow-braised wild boar ragù tossed with robust pasta shapes. The herbal undertones also complement aged Pecorino Toscano, forest mushroom crostini, or herb-crusted lamb cutlets.
