Released only during the cooperative’s most exceptional harvest years, the 2021 Produttori del Barbaresco Barbaresco DOCG Riserva Asili comes from a sheltered, southwest-facing hollow just south of Barbaresco. This parcel sits above lean clay-limestone soil interlaced with sandy veins, a naturally infertile terrain that presses mineral concentration into every grape cluster.

Primary fermentation takes place in stainless steel before the wine moves into large oak barrels for approximately three years. After barrel aging, the wine rests further in bottle, a patient, traditional schedule that has supported the Asili bottling since its first single-vineyard release in 1970. This extended cellar time yields a tightly structured wine built for gradual development.

2021 Tasting Notes

The bouquet presents distinct notes of violet, crushed wild rose, and cake spice that carry cleanly onto the palate. Ripe cherry, raspberry, and blood orange anchor the mid-palette, supported by layers of warm baking spice. Youthfully firm tannins and bright acidity frame a medium-weight body, marking a vintage with clear multi-year aging trajectory.

Suggested Pairings

  • Truffled pasta dishes harmonize with the wine’s aromatic spice and lifted florals
  • Slow-roasted game meats balance the core red fruit and savory spice progression
  • Cellared pecorino provides a sharp, salty contrast that softens the residual tannic grip
