2021 Shafer - Cabernet Sauvignon Hillside Select Napa (750ml)
Shafer Vineyards was founded in 1972, when John Shafer left a 23-year career in publishing and moved his family to Napa Valley to start over as a winegrower. The estate quickly earned a reputation for consistency and quality, and today it stands among the region's most respected producers. Winemaker Elias Fernandez, hired straight out of UC Davis in 1984, has now overseen nearly four decades of vintages, working alongside Doug Shafer to maintain the winery's grounded, hands-on approach even as its wines have become some of the most sought-after in California.
Hillside Select comes from Shafer's steep, amphitheater-shaped estate vineyard, a roughly 54-acre site of rocky outcroppings and knolls shaped like a box canyon. Topsoil here is thin, with roots reaching white volcanic tufa bedrock within about 18 inches, a stress that concentrates flavor in the fruit. Each vintage is a barrel selection of the very best blocks, made entirely from Cabernet Sauvignon and aged roughly 28 to 32 months in new French oak, a long élevage the wine's density and structure are built to absorb without turning overtly woody.
The 2021 shows layers of cassis, black cherry, and blueberry, framed by graphite, dried violet, and dark chocolate, with a mineral, ironstone-like edge typical of the site. Firm, fine-grained tannins give the wine real structure, while bright acidity keeps it lifted through a long finish. Pour this Cabernet alongside a dry-aged ribeye, braised short ribs, or aged Gouda.
