2021 The Paring - Syrah Santa Barbara (750ml)
The Paring was founded in 2006 as a companion label to JONATA and The Hilt, two acclaimed Santa Barbara wineries under the same ownership umbrella as Screaming Eagle. The wine takes its name from the versatile paring knife found in kitchens everywhere, reflecting its goal of being an approachable, food-friendly bottle rather than a special-occasion splurge. Winemaker Matt Dees, who also crafts the wines at JONATA and The Hilt, draws on select vineyard blocks that are either too young or stylistically distinct from his flagship labels, giving The Paring its own lighthearted character while still carrying the pedigree and farming philosophy of its more prestigious siblings.
This Syrah is sourced primarily from vineyard blocks across Ballard Canyon, Sta. Rita Hills, and Santa Maria Valley, three of the most respected growing areas within Santa Barbara County, each offering a distinct combination of coastal fog influence and warm afternoon sun that suits Syrah's need for both ripeness and freshness. After harvest, the wine is aged in French oak, a portion of it new and the rest neutral, for close to two years, a process that builds structure while allowing the fruit's character to remain the focus.
The wine offers classic Syrah aromas of violets, blackberries, and cracked black pepper, layered with a savory, earthy undertone. The palate strikes a balance between dark fruit sweetness and structured tannins, plush at first before firming up through the finish. It pairs well with grilled lamb chops, smoked brisket, or a peppercorn-crusted steak.
