Allegrini's "baby Amarone" — named for the 16th-century estate where it's made — is one of the great values in northern Italian red wine. A blend of 40% Corvina Veronese, 30% Corvinone, 25% Rondinella, and 5% Sangiovese, the wine is made using partial appassimento: 70% of the grapes are fermented conventionally at harvest, while 30% are partially dried before being blended in — adding richness and complexity without full Amarone weight. The two wines are then aged 15 months in second-use French oak barriques
