Domaine Jean-Claude Ramonet stands among Chassagne-Montrachet's benchmark white wine estates, its reputation built by grandfather Pierre Ramonet, who arrived in Burgundy in the late 1920s and gradually acquired vineyards across the village, including a coveted parcel of Montrachet purchased in 1978. Now guided by third-generation vignerons Jean-Claude and his brother Noël, the family farms roughly seventeen hectares across Chassagne-Montrachet, Puligny-Montrachet, and Saint-Aubin, continuing a meticulous, terroir-driven style.
Les Ruchottes ranks among Chassagne-Montrachet's highest, most limestone-rich premier cru sites, set on the upper slope above Morgeot. The vines average around sixty years old, and yields are kept low to concentrate flavor. Grapes are hand-harvested and gently pressed, and the wine ages twelve to fifteen months in a mix of new and used French oak, with extended lees contact, occasional bâtonnage, and light filtration before bottling.
The wine offers aromas of yellow apple, green pear, lemon, and honeycomb, layered with toasted nuts. Medium to full-bodied, it shows a silky, textured palate balanced by juicy acidity and the site's mineral tension, with real length. A few minutes of air help unfurl its full aromatic depth. Pair it with roasted seafood, buttery lobster, or a creamy poultry dish, or serve alongside a triple-cream cheese.
