2022 Justin - Cabernet Sauvignon Paso Robles (750ml)

Justin Vineyards & Winery was founded in 1981 by Justin Baldwin, who saw promise in the limestone hills of Paso Robles long before the region became known for Bordeaux-style reds. His flagship ISOSCELES blend helped put Paso Robles on the wine map and paved the way for the area's later boom. Winemaker Scott Shirley now leads the cellar program, pairing old world techniques like hand harvesting and small barrel aging with modern tools developed on the estate.

The grapes are hand picked, sorted berry by berry, and fermented in stainless steel tanks with twice daily pump-overs to build color and structure. The wine then ages roughly 14 months in French oak, a portion of it new, which lends the finished Cabernet its rounded, polished edges while letting Paso Robles fruit character come through.

The nose offers red raspberry and black cherry set against vanilla, soft herbs, and warming spice. On the palate, bright red plum and ripe cherry meet velvety tannins, caramel, toasted coconut, fennel, and sage, finishing long with floral notes and a touch of pepper. It suits grilled steak, backyard burgers, or a wedge of Manchego.
