Louis Boillot has quietly built one of the most respected small domaines in the Côte d'Or, drawing on vineyard holdings assembled over four generations of his family across Volnay and Gevrey-Chambertin. He founded his own estate in 2002 and has spent the years since making wine alongside his wife, Ghislaine Barthod, in their shared cellar in Chambolle-Musigny, though the two operations remain entirely distinct. Their son, Clément, has since taken over winemaking duties, continuing his father's philosophy of minimal intervention and patient, terroir-focused work across the family's many old-vine parcels.

Champonnet sits on the northern edge of Gevrey-Chambertin's Grand Cru hillside, its northeast-facing slope opening onto the cool Combe de Lavaux valley. The stony, clay-rich soil carries a high proportion of limestone, and the site's exposure gives it a cooler mesoclimate than the more sheltered Grand Cru vineyards nearby. Boillot's vines here average over fifty years old. The grapes are hand harvested and destemmed, given a brief cold maceration, then aged around fifteen to eighteen months in barrels with moderate new oak before bottling without fining or filtration.

Champonnet tends toward a lighter, more refined style than many Gevrey premier crus, and this bottling shows red fruit, dried rose, and gentle spice, wrapped in silky, well-integrated tannins. It's a natural fit for coq au vin, beef bourguignon, or roasted game birds.

"A riper and distinctly Gevrey nose of forest floor, the sauvage and poached plum displays plenty of earth character. There is notably more power, weight and muscular if notably less finesse to the bigger-bodied flavors that terminate in a robust but not hard finish that exhibits very fine length. This is quite promising though it's also definitely a wine that will require extended keeping."
