When Lucien Boillot's grandsons divided their family inheritance in 2003, Louis took his portion of the estate and set out on his own, eventually settling into a shared cellar with his wife, the celebrated winemaker Ghislaine Barthod, in Chambolle-Musigny. Lucien himself had left the Boillot family's original Volnay property, now known as Domaine Henri Boillot, generations earlier to establish new roots in Gevrey-Chambertin. That move gave Louis access to some of the domaine's oldest holdings, including choice parcels in Nuits-Saint-Georges. Son Clément has since taken over winemaking, carrying forward a long-standing commitment to old vines and gentle, hands-off cellar practices.

Les Pruliers sits on a mineral-rich, wind-swept mid-slope in Nuits-Saint-Georges, a site so well regarded that it likely would have earned grand cru status had the appellation not opted out of the 1936 classification entirely. The fruit is hand harvested and destemmed, given a cold pre-fermentation maceration, then aged in barrel for roughly sixteen to eighteen months with moderate new oak before bottling without fining or filtration.

Medium in depth with a crimson hue, this Pinot Noir shows dark fruit, spice, and a subtle floral lift, backed by well-judged acidity and a structured, age-worthy frame. It suits braised beef, game birds, or mushroom-forward dishes, and rewards a few years of patience in the cellar.

"An overtly floral-suffused nose speaks of airy red berry scents that are liberally laced with a lovely range of spice elements as well as subtle earth and humus nuances. There is markedly better complexity to the medium-bodied flavors that possess excellent punch and this sense of vibrancy also can be found on the long and quite firm finish that is moderately austere but not really rustic, indeed I would go so far as to describe this as a Pruliers of relative refinement, which isn't something one finds all the time."
