2022 Louis Boillot - Pommard Fremiers (750ml) [PRE ARRIVAL]
Louis Boillot built his reputation the hard way, striking out in 2003 with a share of the family vineyards after Domaine Lucien Boillot was split between him and his brother Pierre. Four generations of Boillots had assembled these holdings across the Côte de Beaune and Côte de Nuits, and Louis has spent two decades vinifying them in Chambolle-Musigny, in a cellar he shares with his wife, the celebrated winemaker Ghislaine Barthod. The two operations stay commercially and technically distinct despite the shared roof. Their son Clément has since taken the reins, carrying forward a hands-off approach rooted in old vines and unhurried, terroir-focused winemaking.
This premier cru comes from a small parcel in Les Fremiers, planted in 1967 at the southern edge of Pommard, right on the Volnay border, where deep clay soils are studded with large limestone rocks. The grapes are hand harvested, destemmed, and given a cold pre-fermentation soak, followed by punch-downs and pump-overs through roughly three weeks of maceration. The wine then ages about twelve months in barrels, up to thirty percent new oak, before bottling without fining or filtration.
Sitting on the border of two contrasting appellations, this wine balances Pommard's structure with Volnay's elegance. Look for vivid color alongside notes of black cherry, raspberry, and rose petal, framed by supple tannins and a touch of spice. It pairs beautifully with roast chicken, duck, or mushroom-based dishes.
