Domaine Louis Boillot traces its roots to four generations of the Boillot family in Volnay. Louis struck out on his own in 2003 after the family estate, Domaine Lucien Boillot, was divided between him and his brother Pierre. He crafts his wines in Chambolle-Musigny, sharing a cellar with his wife, the acclaimed vigneronne Ghislaine Barthod, though the two domaines remain entirely separate in vinification and sales. Now guided by their son Clément, the estate continues a philosophy built on old vines, minimal intervention, and precise terroir expression across more than twenty parcels in the Côte d'Or.

This premier cru comes from a prized Boillot family parcel in Les Caillerets, planted with old-vine Pinot Noir on the free-draining limestone and clay slopes above Volnay. Fruit is destemmed and given a cold pre-fermentation maceration before aging sixteen to eighteen months in barrels with twenty to thirty percent new oak, then bottled without fining or filtration. The warm, sunny 2022 growing season produced ripe, healthy fruit with balanced acidity.

The result is a medium-bodied red with aromas of red cherry, violet, and dried rose, layered with silky tannins and a subtle mineral finish. Its purity and finesse make it a natural match for roast duck, squab, mushroom risotto, or a simple coq au vin.
