PerSe is the project of two of Argentina’s most acclaimed winemakers, Edgardo “Edy” del Popolo and David Bonomi. They work at the source of some of the country’s most talked-about Malbec. Inseparable comes from the Monasterio vineyard, planted around 2010 by the monks of the Cristo Orante monastery high in Gualtallary, at about 1,400 meters in the Uco Valley. The vines grow in calcium-rich sand and gravel, which gives the wine its chalky texture. The grapes are picked by hand and fermented with native yeasts in concrete, with a 30-day maceration. The wine then ages a year in the same tanks, with no oak, and is bottled unfined and unfiltered. Expect violet, lavender, plum, blueberry and red cherry, with mountain herbs and pink peppercorn. It’s built on acidity rather than weight, with fine, chalky tannins and a long, savory finish. Pair with skirt steak and chimichurri, lamb or beef empanadas.

95 Points
"The 2022 Inseparable offers a slightly darker-fruited, more structured profile than the comparatively lithe and lifted 2021 I tasted next to it and will likely benefit from a bit of extra bottle aging to reveal its full potential. It opens with a subtle, herbal and black-fruited nose that gradually gains amplitude in the glass, introducing a svelte, elegantly concentrated palate retaining the finesse that defines the Per Se Range. It closes with a delineated, fine-grained and pleasantly drying finish. As is typical, it was destemmed and vinified entirely in concrete before maturing for 12 months."
