Domaine Robert Chevillon is a fifth-generation estate based in the village of Nuits-Saint-Georges, now guided by brothers Bertrand and Denis, with their father Robert still involved at the property that bears his name. The domaine has long been regarded as one of the appellation's benchmark addresses, tending a broad range of parcels across Nuits-Saint-Georges that includes several of its finest premier cru sites, alongside small production of Bourgogne Aligoté, Chardonnay, and Passetoutgrain.

Les Cailles lies in the southern part of the appellation on cultivated soils with an easterly exposure at roughly 250 to 260 meters, planted with vines over seventy-five years old across a parcel of just over a hectare. The grapes are entirely destemmed, fermented with moderate yields and extended maceration at comparatively warm temperatures, then aged in barrels sourced largely from Nuits' own Tonnellerie Sirugue, with premier cru cuvées typically seeing around thirty percent new oak.

The wine offers aromas of black cherry, plum, and crushed violet, joined by raspberry, orange zest, and warm spice. On the palate it is medium to full bodied, with refined tannins, a mineral edge, and a long, layered finish. It complements braised short rib, roasted venison, or an aged Alpine cheese.

"The 2022 Nuits Saint-Georges Les Cailles 1er Cru has a bold and

forthright bouquet with black cherries, black plum, crushed violet and

just a touch of g. The palate is medium-bodied with succulent ripe

tannins and gentle grip. It is fresher on the finish than the Les Pruliers,

with ne tension and length. This is very promising - the terroir shows

through beautifully.
