Alice and Olivier de Moor studied enology together in Dijon before setting out on their own, planting their first vines around Courgis in 1989 while still working other jobs to get by. Olivier tends to the vineyards while Alice runs the cellar, though the couple makes every decision jointly. Beyond their Chablis holdings, they farm a parcel in nearby Chitry-le-Fort where Aligoté has been planted since the mid-1990s, part of a broader commitment to varieties that once flourished across the region before Chardonnay became its singular focus. Organic since 2005, the domaine remains modest in size but outsized in reputation among growers working close to the land.

This Aligoté comes from a 2.5-hectare parcel called Champagne, planted with a northwest exposure on shallow clay over hard limestone. The grapes are hand-harvested, destemmed, and pressed gently, then undergo spontaneous fermentation with native yeasts and no added sulfur. The wine completes malolactic fermentation and ages on its lees for close to a year in enamel-lined steel tanks, without stirring or racking, preserving freshness rather than adding weight or oak character.

The wine offers citrus, green apple, and a saline, chalky minerality that reflects its limestone terroir. The palate is lean and energetic, with bright acidity carrying through a clean, refreshing finish. It pairs nicely with fresh goat cheese, steamed clams, or a simple green salad.
