2023 De Moor - Chablis Coteau de Rosette (750ml)
Alice and Olivier De Moor built their domaine from scratch in Courgis, a small village just southwest of Chablis, planting their first plots in 1989 while both still working other jobs to get by. Trained as enologists, the couple has farmed organically since 2005 and works with a gentle touch throughout, from small harvest crates to a pneumatic press acquired to protect the fruit. Olivier tends the vines while Alice oversees the cellar, though every decision is made together. Their wines have become a reference point for growers seeking a fresher, more transparent style of Chablis.
Coteau de Rosette comes from a single hectare of Chardonnay on a steep, southeast-facing slope with unusually varied soil, moving from eroded rock at the top to dense clay lower down. The plot is considered the couple's finest, and the fruit is sometimes harvested in two separate passes to capture full ripeness across its uneven terrain. Fermentation happens spontaneously with native yeasts, followed by malolactic conversion and around eleven months of lees aging in old barrels beneath Olivier's family home. No sulfur is added at harvest or during vinification.
The wine shows ripe apple and pear fruit alongside honeyed, spiced notes and a distinct flinty minerality. The palate is textured and layered, balancing riper fruit against bright, almost electric acidity. It pairs well with roast fish, herbed goat cheese, or a simple potato gratin.
