Alice and Olivier de Moor have run their small domaine from the village of Courgis since the late 1980s, farming organically and shaping their reputation on precision rather than volume. Both trained as enologists, and their hands-on approach carries through every stage, from limiting yields in the vineyard to intervening as little as possible in the cellar. The couple expanded into premier cru Chablis in 2017, adding small parcels that reflect the same patient, low-intervention philosophy applied across their older holdings.

Mont de Milieu sits on a steep, south-facing slope on the eastern side of Chablis, where red clay over Kimmeridgian limestone and one of the region's warmest mesoclimates produce a richer, more structured style than most other premier crus. The De Moors' plot includes vines planted as far back as the 1930s, set on ground so narrow and steep it must be worked by horse rather than tractor. Grapes are destemmed, pressed gently, and fermented spontaneously with native yeasts in older Burgundy barrels, then aged on the lees without stirring for a year or more before an unfiltered bottling with minimal added sulfur.

The wine offers orchard fruit and citrus alongside notes of almond, chamomile, and light spice, framed by a firm mineral core. The palate is dense yet precise, with ripe fruit balanced against taut, persistent acidity. It pairs well with roast guinea fowl, grilled langoustine, or aged Comté.
