Domaine de Montille is now guided by ninth-generation siblings Étienne and Alix de Montille, who have stayed true to their father Hubert's pursuit of elegant, pure, and balanced wines. The estate moved away from chemical fertilizers and herbicides as early as 1985 and completed its transition to full biodynamic farming by 2005, a commitment that continues to shape every cuvée today.

En Remilly sits just behind Le Montrachet, on a mid-slope, south-facing site widely regarded as Saint-Aubin's finest vineyard. The domaine's plot benefits from thin, stony, limestone-rich soil and a meaningful share of vines over seventy years old. After a gentle settling period, the must is fermented in small 228 and 600-liter barrels, then aged roughly a year in wood before finishing several additional months in stainless steel to preserve freshness and precision.

The wine pours a pale lemon hue and offers an evocative bouquet of crushed stone and sea spray, layered with citrus and a touch of tart lemon. On the palate, bright acidity and chalky minerality bring real focus, backed by fine weight and a long, savory finish. It suits shellfish, roast chicken, or a young goat cheese equally well.
