Domaine Jean-Marc et Thomas Bouley farms roughly eight hectares of vines in the Côte de Beaune, easily recognized by their distinctively high, evenly spaced canopies that are hedged late to cast dappled shade over healthy, aerated soils. Thomas Bouley now runs day-to-day operations alongside his father, and the domaine has earned a strong reputation for meticulous vineyard work, moderate yields, and consistently clean, open fruit at harvest.

Clos de la Cave is a small monopole parcel of just 0.68 hectares located on a steep slope directly behind the domaine, with southeastern exposure and deep, well-draining white marl and sandy soil. The vines were planted in 1961, 1975, and 1998. Farming is sustainable, without herbicides or chemical fertilizers, and the wine is made with up to half whole-cluster fruit, fermented with ambient yeast in concrete or steel, then aged around eighteen months on the lees in barrels with a modest portion of new oak. The wine is neither fined nor filtered.

The 2023 shows a perfumed bouquet of rose petal, incense, spice, and raspberry, with a medium to full body, velvety texture, and beautifully polished tannins leading to a long, aromatic finish. It pairs nicely with duck breast, mushroom risotto, or a simple roast chicken.
