Domaine Joblot put Givry on the map, and Servoisine is their calling card — the warmest, south-facing premier cru in the appellation. Juliette Joblot farms with brutal selectivity, cutting up to 40% of a vintage when quality demands it, and it shows in the glass: racy, mineral-driven pinot with firm, dusty tannins that soften into something suave and spicy over time. Destemmed fruit, roughly half new oak, and a texture built for the table rather than the cellar alone — pair it with a good steak or a shallot-laced bavette.
