The Jambon family has tended Domaine du Pavillon de Chavannes on the slopes of Mont Brouilly since 1861, with Laure Jambon taking over from her father in 2020 to become the estate's latest steward. The domaine's top bottling carries an unusual distinction: it takes its name, Cuvée des Ambassades, from the fact that it has long been purchased by France's Quai d'Orsay for service in French embassies around the world, a mark of its quality and consistency over generations.

The wine is sourced from the domaine's best parcels on Mont Brouilly, an extinct volcano whose distinctive blue granite soils are threaded with volcanic porphyry, a mineral deposit that gives Côte de Brouilly its signature scented, concentrated character. Roughly half of the estate's twelve acres, planted with vines averaging forty years old, are reserved specifically for this cuvée. Winemaking stays deliberately restrained, with fermentation in concrete vats followed by aging in large oak foudres, an approach that favors purity and minimal extraction over modern power.

The wine shows a bright garnet color with aromas of wild cherry, raspberry, and pomegranate, layered with peony, crushed granite, and a whisper of wood smoke. The palate is light to medium-bodied yet deeply textured, low in tannin, savory, and mineral-driven. Pair it with roast poultry, braised pork, or a soft cheese.
