Maison Simonnet-Febvre is one of the oldest wine houses in Chablis, founded in 1840 by Jean Febvre and long recognized as the appellation's only producer of traditional method Crémant de Bourgogne. Acquired by Maison Louis Latour in 2003, the estate has since modernized its cellars with new stainless steel tanks and pneumatic presses while holding onto historic vineyard parcels, including a small plot in the Grand Cru site of Les Preuses. The house now farms roughly nine acres across Grand Cru, Premier Cru, and village-level Chablis vineyards.

This village-level cuvée draws on vines averaging thirty-five years old, grown on the region's characteristic Kimmeridgian limestone soils. The wine is vinified and aged entirely in stainless steel tank for six to ten months on the lees, a method chosen to preserve freshness and let the appellation's natural minerality lead rather than any oak influence. It arrives here in a convenient 375ml half bottle, well suited to smaller pours or solo dinners.

Pale yellow-green in the glass, the wine shows an intense nose of ripe orchard fruit layered with mineral nuances. The palate is round and generous, carrying notes of pear and melon toward a tangy, saline finish. Try it alongside sushi, ceviche, or fresh mozzarella.
