Textbook was founded by Jonathan Pey and Abi Horstman, whose travels through Italy and other parts of Europe left a lasting impression on their winemaking philosophy. They came home determined to bring a sense of European restraint to California's naturally bold fruit, coining the phrase "power with restraint" to describe the balance they chase in the cellar. That approach has become the label's signature, aiming for wines that carry the intensity California is known for without losing sophistication or drinkability.

This bottling is a blend of ninety-five percent Cabernet Sauvignon and five percent Petite Sirah, sourced from four distinct sub-districts across Paso Robles, including the Estrella District and the cooler, marine-influenced El Pomar District near the Templeton Gap. The 2023 growing season ran long, shaped by a wet winter and a cool spring that extended hang time on the vine without sacrificing acidity. Individual lots were aged separately in French oak for months before the winemaking team hand-selected the final blend.

The wine offers aromas of Satsuma plum, red currant, anise, and warm baking spice, leading into flavors of juicy black cherry, raspberry, and milk chocolate. The palate is rich and opulent, with smooth, well-integrated tannins carrying through to a polished finish. Pair it with grilled tri-tip, braised short ribs, or a hard aged cheddar.
