The Paring is the second label from Jonata and The Hilt, the acclaimed Santa Barbara wineries. The Paring Chardonnay is made from small lots of fruit from the Sta. Rita Hills estate vineyard of Salsipuedes, including the Bentrock, Radian, and Puerto Del Mar blocks, that don't make the final cut for The Hilt's flagship wines. While not certified biodynamic, these vineyards are farmed to the highest standards, functioning as a polyculture with bee hives, grazing ruminants, fruit, and olives, all without artificial fertilizers, pesticides, or herbicides.

Winemaking mirrors The Hilt's approach, with entirely native fermentations and no added nutrients, enzymes, acids, or sugars, though The Paring's elevage is shorter and relies more heavily on stainless steel and neutral oak. The result is a medium-bodied, juicy, and lively Chardonnay with integrated acidity and a supple, easy-drinking style.

Expect melon, stone fruit, brioche, and honeyed floral notes, all wrapped in bright, energetic fruit with excellent delineation. Yellow apple and hard pineapple mingle with crisp acidity, stone fruit, and a touch of sumac, threaded with sweet spice and a filigree of minerality.

This is a more exuberant, fruit-driven, and fresh pour than its Hilt counterpart, making it a great entry point into the unique terroir of this special Sta. Rita Hills estate. Pair with roast chicken, shellfish, or a creamy pasta dish.
