2023 Vignoble des Cabottes - Chevalier Montrachet La Cabotte (750ml) [PRE ARRIVAL]

Vignoble des Cabottes is a newly independent Burgundy estate created in 2025 by Artémis Domaines, the group behind Château Latour and Clos de Tart, out of the finest Grand and Premier Cru parcels formerly farmed by Bouchard Père & Fils. The 35-hectare domaine spans nearly 250 years of history, from a Volnay Caillerets parcel purchased in 1775 to Grand Cru holdings on the Montrachet and Corton hillsides. Its name honors the small dry-stone shelters, or "cabottes," scattered across the Côte d'Or, historically used by vineyard workers for shelter and rest. The estate is now certified organic and beginning a transition to biodynamic farming, and 2023 marks its first vintage released under the Cabottes name.

La Cabotte is a tiny 0.21-hectare parcel sitting at the highest point of Chevalier-Montrachet, directly above the Montrachet grand cru itself, on limestone-rich, marly soil with east-southeast exposure. Grapes are hand harvested in small crates and carefully sorted, then pressed in stages, with the wine aged in French oak before bottling.

The wine is exceptionally dense and complex, with layered notes of lemon tart, white peach, and crushed stone, carried by vibrant acidity and a distinctive saline, mineral finish. Structured for long aging, it's an outstanding match for lobster, roasted turbot, or a rich cream-based sauce.
