2023 Vignoble des Cabottes – Savigny-lès-Beaune 1er Cru "Les Lavières" (750ml)

A beautifully crafted and quietly compelling Premier Cru from one of Burgundy's most charming and undersung villages — and a wine that delivers genuine Côte de Beaune elegance at a price that still makes sense. Vignoble des Cabottes is a small, artisan domaine bringing focused, terroir-driven winemaking to the Les Lavières climat — one of Savigny's most celebrated and historically significant Premier Cru sites. The name "Les Lavières" derives from the great number of large flat stones — called "laves" — found in the vineyard's rocky subsoil, stones historically used by the Merovingians for their tombs, one of which can still be seen in the Louis XI room at the Château de Beaune. The light, stony soils produce structured, tight, and firm wines unlike many of the softer expressions from Savigny — wines with a seriousness and mineral backbone that reward patience and set the appellation apart.  

The 2023 vintage — widely celebrated across the Côte de Beaune for its freshness, aromatic precision, and beautifully fine tannins — shines vividly in this bottling. Translucent ruby in the glass with the characteristic Burgundian clarity, the nose is fragrant and classically varietal — red cherry, wild strawberry, dried rose, violet, and a delicate stony minerality that speaks unmistakably of the limestone-rich subsoil below. On the palate it is medium-bodied and silky, with lively acidity, refined tannins, and a clean, mineral, persistently elegant finish that belies the modest appellation name on the label.
