Vignoble des Cabottes was launched in 2025 by Artémis Domaines, the group behind Château Latour and Clos de Tart, bringing together 35 hectares of the most prestigious Grand and Premier Cru parcels formerly farmed under the Bouchard Père & Fils name. Bouchard itself, founded in 1731, remains one of Burgundy's oldest houses, and 2023 is the first vintage released under the new Cabottes identity as the estate transitions toward organic and eventually biodynamic farming.

Les Lavières takes its name from the large flat stones, called "laves," found in its rocky subsoil, historically used by the Merovingians for tombs. This four-hectare, south-facing parcel sits on a gentle slope of clay and limestone and ripens later than much of Savigny, typically yielding a more delicate, floral style than the appellation's often softer wines. Grapes are hand harvested in small cases, carefully sorted, and partially or fully destemmed depending on the vintage, then fermented in small vats before aging in oak.

The 2023 shows the site's signature floral aromatics layered over a dark-fruited nose. The palate is deliciously sweet yet framed by fine, chalky tannins, giving the wine real vibrancy and purity without sacrificing depth. It's an excellent match for roast chicken, charcuterie, or a simple mushroom tart.
