Vignoble des Cabottes is a newly independent Burgundy estate created in 2025 by Artémis Domaines, the group behind Château Latour and Clos de Tart, drawing together the finest Grand and Premier Cru parcels formerly held by Bouchard Père & Fils. Volnay Caillerets is the estate's founding vineyard, acquired all the way back in 1775, making it the very first plot the historic house ever purchased. The Carnot family, former owners of the land, are still honored in the cuvée's name today, and the 2023 vintage is the first to be released under the Cabottes label.

The Caillerets vineyard is prized for its mix of limestone and clay, with more limestone toward the upper slope contributing minerality and elegance, while the Carnot section carries a slightly higher proportion of clay that helps retain moisture and supports concentration in the fruit. Grapes are hand harvested and carefully sorted, then vatted for 15 to 20 days before aging around 12 to 14 months in French oak, with 30 to 40% new barrels.

The wine typically shows a deep ruby color with aromas of dark berries, cherry, rose petal, and spice, sometimes touched by smoke or raw cocoa. On the palate it's medium to full-bodied, silky, and concentrated, with fine acidity and a long, mineral finish. It pairs beautifully with roast duck, mushroom risotto, or a well-seasoned coq au vin.
