Domaine Weinbach sits at the foot of the Schlossberg hill, its name borrowed from the small stream running through the property. Capuchin monks built the estate in 1612, and after being sold as national property during the French Revolution, it passed to the Faller brothers in 1898. Today Cathy Faller runs the domaine alongside her sons Eddy and Théo, who has guided the vineyards toward biodynamic farming since 2005, continuing a family style built on precision and restraint.

This cuvée comes from the Prediger lieu-dit, just below the Grand Cru Kaefferkopf, where sandy, clay-flecked soils and short pruning keep yields naturally low. Grapes are hand-picked at full ripeness, pressed gently as whole clusters, and co-fermented together with native yeasts in old oak vats, a method meant to deepen complexity while letting the terroir speak clearly through the blend of Riesling, Auxerrois, Pinot Gris, Muscat, and Sylvaner.

The wine offers a floral nose touched by peach and apricot, leading into a medium-bodied palate that feels both firm and gentle, framed by bright, elegant acidity and a long, saline finish. It works well as an aperitif or alongside quiche, onion tart, warm goat cheese salad, or grilled chicken.
