Chanterêves is the joint project of Tomoko Kuriyama and Guillaume Bott, who have worked together since 2010 out of a small cellar tucked beneath a house in Savigny-lès-Beaune. Tomoko, originally from Japan, trained at Geisenheim in Germany and later managed the historic Friedrich Altenkirch estate in the Rheingau, while Guillaume cut his teeth as a winemaker at Domaine Simon Bize. Both are trained enologists, and their partnership has become known for wines of unusual precision and purity.

Mainbey is the largest single holding the domaine farms, a high-altitude site sitting around four hundred seventy meters above the surrounding villages. It is split into three parcels of Chardonnay and one of Aligoté, planted on notably stony, limestone-rich soils roughly forty years ago. The grapes are crushed and pressed slowly over six hours, fermented with wild yeast and a pied de cuve starter, then aged twelve months in a mix of 228 and 600-liter barrels with minimal sulfur and little to no fining.

The altitude and rocky ground give a compact, coiled Chardonnay with real tension and layered aromatics. Expect citrus, orchard fruit, and a saline, stony finish. Pair it with seafood risotto, grilled sea bass, or Ossau-Iraty.
