2024 De Moor - Chablis l'Humeur du Temps (750ml)
Alice and Olivier de Moor met while Olivier was managing vines at a larger Chablis property, and set out on their own in 1989, planting the first of what would become a small collection of estate parcels around Courgis. Both trained enologists, they've farmed organically since 2005, well before it was common practice in the region. In 2002 they switched to small harvest crates so grapes would arrive at the winery uncrushed, and in 2007 they built a gravity-fed cellar to avoid pumping the wine at any stage. That attention to detail defines everything the domaine produces, this cuvée included.
L'Humeur du Temps, "the mood of the times," comes from three to four parcels around Courgis first planted in 1995, each fermented separately before blending to capture the character of the vintage as a whole rather than a single site. Grapes are picked by hand, destemmed, and pressed gently, then undergo spontaneous fermentation with native yeasts. The wine completes malolactic fermentation and ages close to a year across a mix of vessels, including used barrels, large old foudres, and enamel-lined tanks, without stirring or racking. Bottling is unfiltered, with just a touch of sulfur added at that stage.
The wine offers lemon curd, orchard fruit, and a light spiced edge over a firm chalky minerality. The palate is bright and precise, with saline acidity carrying through a long, mineral finish. It pairs nicely with grilled sea bream, soft-ripened cheese, or a simple herb salad.
