At Domaine Henri Boillot, colors and generations divide the work: Henri handles the whites of Puligny-Montrachet, seeking wines that are "straight, taut, precise, pure and elegant," while his son, Guillaume, who joined the domaine in 2008 and became chef de culture in 2012, shapes the reds of Volnay with his own distinct touch. Strategically based in Meursault, between the two appellations, the domaine has made precise expression of each village's terroir its central mission, whether the limestone-marl soils of Puligny or the finer, schist-laced ground of Volnay. Father and son now describe themselves as a balanced team, passing knowledge back and forth to secure the estate's future.
Les Combettes is widely considered one of Puligny-Montrachet's finest premier crus, sitting in a comparatively warm pocket of the appellation that lends the wine a touch of roundness alongside real minerality and freshness. Henri Boillot owns roughly half a hectare of fifty-year-old vines here, right beside a parcel farmed by Domaine Girardin, and it's typically among the first sites harvested each vintage given how quickly the fruit ripens. The wine is vinified with minimal intervention, aged in a mix of new and used oak, and bottled without excessive filtration to preserve its character.
The wine shows aromas of ripe apple, toast, and hazelnut alongside orange oil and white flowers. The palate is medium to full-bodied and satiny, with lively acidity and a chalky grip on the finish. It pairs beautifully with lobster, roast poultry, or foie gras.
