Domaine Jean-Charles Fagot is a small family estate rooted in Corpeau, a village just outside Chassagne-Montrachet in Burgundy's Côte de Beaune. The Fagot family has lived and farmed there since 1860, and Jean-Charles represents the fifth generation to make wine on the property, following a detour through the music world in Paris and Los Angeles before returning home in the mid-1990s to take over from his father. He now splits his time between the domaine and a well-regarded local restaurant, farming with lutte raisonnée to limit chemical intervention wherever possible.

Les Champs l'Huillier comes from old vines within the Bourgogne Côte d'Or appellation, and the estate treats it as one of the more serious bottlings in its regional-level range. The Chardonnay ferments with natural yeasts and ages for around twelve months in French oak in the Fagot family's cellars, a traditional approach meant to build texture and complexity beyond what's typical for a simple Bourgogne Blanc.

The wine shows bright citrus, pear, hazelnut, and a touch of brioche on the nose, with a flinty, mineral edge running through the palate. It's tensile and focused, backed by lively acidity and real persistence for its level. It pairs well with roast chicken, scallops, lobster, or a soft-ripened cheese like Camembert.
