2024 Jean-Marc Boillot - Bourgogne Blanc (750ml) [PRE ARRIVAL]
Jean-Marc Boillot cut his teeth working alongside his grandfather, Henri Boillot, at the family domaine in Pommard through the late 1960s and into the 1980s, before walking away in 1984 determined to make richer, more concentrated wines of his own. He spent the following years as winemaker for Olivier Leflaive while quietly building a small holding of his own vines, work that so impressed his grandfather that Henri eventually bequeathed him half his vineyard. A separate inheritance came through his maternal side: his grandmother was the daughter of the legendary Étienne Sauzet, bringing further prized parcels into the fold. Boillot established his own domaine in 1985 and still runs it from his grandfather's house and cellars in Pommard, now alongside his daughter, Lydie, and her husband, François Alzingre.
This Bourgogne Blanc draws on Chardonnay from the domaine's holdings across the Côte de Beaune, hand harvested and sorted in the vineyard to ensure only the best fruit reaches the cellar. The grapes are pressed whole-cluster in pneumatic presses without any crushing beforehand, then vinified using the same meticulous, terroir-respecting techniques the domaine applies to its grander Puligny-Montrachet and Chassagne-Montrachet bottlings.
The wine offers pure, fresh, expressive aromas of white flowers and citrus. The palate is medium-bodied with bright acidity and a clean, mineral finish. It pairs well with shellfish, grilled white fish, or roast chicken.
