2024 Joblot - Givry Cellier aux Moines (750ml) [PRE ARRIVAL]
Domaine Joblot led the modern revival of Givry, a Côte Chalonnaise appellation whose wines were once favored in the era of Henri IV before phylloxera set the region back for generations. The estate is now led by Juliette Joblot, who farms roughly thirteen and a half hectares sustainably, with nine hectares reserved for premier cru sites. Rather than picking by sugar readings, the family waits for the acidity levels they're after, a habit that has become central to the domaine's identity.
Clos du Cellier aux Moines sits above the village with full southern exposure, one of Givry's two standout premier cru parcels alongside Servoisine, planted on rocky limestone soil that lends the wines their signature minerality. Vines here average about thirty-five years old. Yields are kept low through severe bud-thinning and green harvesting, and grapes are hand-picked, sorted in the vineyard, then fully destemmed and fermented in closed vats. The wine ages roughly a year in barrel, split evenly between new and one-year-old oak.
The result is a soft, ripe-textured red with real chew and spice, layered with dark fruit and a persistent, savory finish that rewards a few hours of decanting. It suits roast duck, braised beef, or mushroom-based dishes particularly well.
