Domaine Joblot is credited with reviving the Givry appellation in Burgundy's Côte Chalonnaise, an area whose wines were prized as far back as the reign of Henri IV before phylloxera set the region back for decades. Founded by Charles Joblot, the estate is now guided by Juliette Joblot, the second generation to run the property, who farms roughly fourteen hectares sustainably, nine of them premier cru. Rather than judging ripeness by sugar levels, the family times its harvest around acidity, a hallmark of the domaine's style.

Servoisine sits among Givry's warmest premier cru parcels, planted with Pinot Noir vines around thirty-five years old on clay-limestone soil facing due south. Grapes are hand-picked and sorted, then fully destemmed and fermented with wild yeasts in closed vats over a two-week cuvaison, with regular punch-downs to build structure. The wine then ages roughly a year in barrel, close to half of it new oak, before bottling unfiltered.

Expect dark berry fruit, violet, and a savory, spiced edge, framed by firm tannins and a racy backbone that should soften with a few years in the cellar. It pairs naturally with roast duck, braised short rib, or aged hard cheeses.
