Mylonas Winery was founded in 1917 in the village of Keratea, in eastern Attica, by Antonis Mylonas, at a time when fermentation still took place in amphorae rather than steel tanks. Now in its third generation, the estate is run by brothers Stamatis and Antonios Mylonas, who farm twelve hectares of vineyards between 80 and 200 meters above sea level. The winery has become closely tied to Savatiano, Greece's most planted grape and historically the backbone of Attica's retsina production, a variety Stamatis has worked for years to show in a more serious light.

The vineyards sit on soils of limestone and schist with pockets of gravel, and the surrounding sea brings mild winters along with cooling summer breezes that help preserve freshness through the growing season. This unresinated bottling lets Savatiano speak on its own terms, made in a clean, straightforward style without the herbal pine resin traditionally associated with the grape, allowing its natural character to come through.

The wine offers a lovely bouquet with slightly herbal notes alongside white peach and a clean, precise intensity reminiscent of a well-made Gavi di Gavi. On the palate, crisp green apple mingles with aromatic ripe lemon, finishing bright and refreshing. It pairs naturally with grilled fish, octopus, or calamari, and works equally well with a spread of Mediterranean meze.
