Salvatore Pala founded the family estate in Serdiana in 1950, and it's now run by his grandson Mario, the third generation to lead the winery. Under Mario's direction Pala has grown into one of Sardinia's most respected producers, expanding to eight distinct properties dedicated to the island's native red and white grapes while staying firmly rooted in local tradition. Stellato, meaning "full of stars," has long stood as the estate's flagship white, earning Gambero Rosso's top rating for eleven consecutive vintages.

This Vermentino comes from vines around sixty years old in the Is Crabilis vineyard near Ussana, planted on sandy, calcareous soil rich in pebbles at roughly 180 meters above sea level. After a gentle pressing, the must ferments in stainless steel at a controlled, cool temperature using yeasts selected from the estate's own vineyards. The wine then rests on its fine lees for around five months before bottling, a process that builds texture without any oak influence.

The 2024 shows an intense straw-yellow color with green highlights, opening to aromas of Mediterranean herbs, white flowers, and orchard fruit. The palate is full and creamy, with fresh acidity, a touch of minerality, and a long, citrus-tinged finish. It's an excellent match for shellfish, grilled fish, or a light seafood pasta.
