Champagne Cuillier is a family estate founded in 1904 in Pouillon, on the Massif de Saint-Thierry just north of Reims, and has been farmed by successive generations of the same family ever since. Vincent Cuillier, the current generation, began isolating what he considered the domaine's finest parcels back in 2015 and launched his own eponymous label a few years later. He farms according to permaculture and agroforestry principles, planting trees among the vines and using cover crops and homemade compost to build soil life on the estate's unusually sandy terroir.

Chemin des Rois comes from a single parcel called Le Mont Agé in the village of Chenay, planted mostly to Pinot Noir with a smaller share of Chardonnay. The grapes ferment with native yeasts in barrel, where the wine also spends a full year of aging before moving to the bottle for two to three and a half years of further rest. No sulfur, fining, filtration, or dosage is used at any stage, leaving a wine shaped entirely by its site and its yeasts.

The result is rich and chalky, with layers of apricot, pear, ginger, and light tropical spice carried on crisp, mineral-driven acidity. Try it with pan-seared trout or a plate of soft-ripened cheese.
