Samuel Billaud built his reputation from a gravity-fed winery in the heart of Chablis, drawing on both estate vines and fruit purchased from some of the region's most respected growers. His range spans everything from village-level Chablis to top grand crus like Les Clos and Blanchots, earning him comparisons to Chablis icons like the Raveneau family, all while keeping his prices notably more accessible.

Montée de Tonnerre sits just east of Chablis on the right bank of the Serein, right alongside grand cru Blanchots, and is often considered one of the finest premier cru sites in the appellation. Billaud owns two parcels here at different elevations: Chapelot, lower on the slope, ripens earlier and lends richness and breadth, while the higher Triangle parcel adds vitality and mineral drive. The two are blended to balance depth with tension, aged with the same light touch of large-format oak and stainless steel used across his premier and grand cru range.

The result is wonderfully aromatic, with a creamy, lees-driven texture balanced by bright, zingy acidity and mineral citrus notes. Ripe stone fruit, peach, and pear round out the palate, finishing long and structured with real aging potential. It's an excellent match for richer seafood, like grilled scallops or a creamy fish stew.

Once again, the mouthfeel of the middle weight flavors is super-sleek with excellent delineation that carries over to the almost painfully intense, chiseled, stony and strikingly long finish. This is pretty much textbook MdT so if you can find it, buy it."
