One of Chablis' most thrilling old-vine Premier Cru expressions — and arguably Samuel Billaud's most singular and prized bottling after Montée de Tonnerre. From just 0.60 hectares of 80-year-old vines, aged entirely in stainless steel for 18 months on lees with one racking — pure, unadulterated Chablis terroir with no oak interference whatsoever. Wineanorak awarded 96 Points to the 2024 Vaillons VV, and the Séchet consistently matches it — fragrant and refined with stone fruit, citrus, floral notes, and a hint of honeysuckle, with a vibrant, laser-focused palate combining bright lemony fruit with mineral drive, fresh mouthwatering acidity, and a long, precise, persistent finish. Although it ages as well as Montée de Tonnerre, Billaud's Séchet finishes in a different place — really very classy and long, a great combination of pear fruit and a touch of sunny peach with abundant minerality.
