Samuel Billaud has quickly established himself as one of Chablis's most exciting producers, working from a winery in the heart of the appellation that once belonged to Stéphane Moreau-Naudet. The gravity-fed cellar lets him handle the wines with minimal intervention, and his portfolio draws on both estate vines and fruit purchased from some of Chablis's most respected growers, including parcels in top-tier grand crus like Vaudésir, Les Clos, and Blanchots.
The 2024 vintage was one of the most demanding in recent memory, marked by spring frost, repeated hailstorms, and persistent rain that fueled mildew pressure across the region. Yields fell sharply as a result, and Billaud has described the vintage as delivering unusually concentrated acidity and salinity, echoing the classic, saline character of 2014. In the cellar, the grand cru wines typically age in a mix of large-format oak barrels and stainless steel, with just enough wood to add texture without masking the vineyard's imprint.
The result is a wine of striking equilibrium, opening with an exotic nose of passion fruit, citrus peel, and pear that carries through to a taut, mineral palate with real precision. It's an excellent match for oysters, shellfish, or a simply prepared white fish.
