Domaine Servin is one of Chablis's largest landholders, working four grand crus, Blanchots, Bougros, Les Clos, and Preuses, alongside six premier crus including Montée de Tonnerre, across roughly 30 hectares. François Servin, working alongside longtime associate Marc Cameron, has pushed the estate forward in recent years by returning to hand harvesting across all the grand crus and much of the premier cru fruit, and by planting new vines from uncloned, massale-selected Chardonnay at higher density than is typical in the region.

Montée de Tonnerre sits on the right bank of the Serein, directly beside Grand Cru Blanchot and on the same geological line as Chablis's finest sites. Its notable white clay, layered over Kimmeridgian limestone rich in ancient oyster fossils, has helped earn the vineyard a reputation as arguably the best and most consistent premier cru in Chablis. Servin's holding here, one of the appellation's largest at nearly three hectares, includes older vines that lend real depth. The wine ferments and matures entirely in tank, with no oak influence, keeping the fruit's purity front and center.

This bottling shows lemon-lime, sea spray, and spice-inflected pear and apple, finishing bone dry with lingering minerality. It pairs beautifully with grilled fish, oysters and other shellfish, or simple roast chicken.

"An exuberantly floral-suffused nose speaks of brine, petrol, apple and pretty spice wisps, all of which is trimmed in just enough wood to notice. There is both good volume and verve to the delicious, rich and refined middle weight flavors that also flash evident minerality on the more complex and impeccably well-balanced finale. Good stuff and worth checking out."
