2024 Servin - Chablis Selection Massale (750ml) [PRE ARRIVAL]
Domaine Servin traces its roots in Chablis back to the 1600s and today ranks among the region's oldest and largest landholding estates, with roughly 36 hectares under vine. The domaine is now run by François Servin, a direct descendant of the family's original vine-growers, working alongside longtime export manager Marc Cameron. Servin produces wine across all four tiers of the Chablis hierarchy, from Petit Chablis up through Grand Cru, and while full organic certification remains impractical given the region's cool, marginal climate, the estate has steadily reduced its use of chemical inputs in the vineyard.
This cuvée comes from Les Pargues, a Left Bank vineyard near the Serein river that narrowly missed premier cru status when the appellation's hierarchy was drawn up. The vines, some over sixty years old, were propagated through sélection massale, meaning cuttings were taken directly from the domaine's best-performing vines rather than nursery clones, and grow in Kimmeridgian marl and limestone soil rich in ancient oyster fossils. The fruit ferments partly in stainless steel and partly in older oak with no new wood, preserving freshness after a low-yielding, frost- and hail-affected 2024 season.
The wine shows apple, sea breeze, and a whisper of petrol alongside citrus confit, finishing on bitter lemon with a succulent, mineral-driven texture. It pairs beautifully with oysters, other raw shellfish, or fresh goat cheese.
