2024 Winiveria - Sparkling Cabernet Sauvignon Rose (750ml)
Winiveria was established in 2005 when Gia Piradashvili and his partners began building a winery in the village of Vardisubani, in the Telavi district of Kakheti. The estate later added Chateau Mere, completed in 2011, and has since grown from a Kakheti-focused producer into one working with grape varieties from across Georgia, including Imereti and Racha. In response to demand from European partners, Winiveria has also begun producing pet-nat and other sparkling styles alongside its traditional qvevri-aged reds and whites.
Cabernet Sauvignon is normally vinified as a rosé through limited skin contact, just enough to draw out color and aromatic compounds before the juice is pressed off the skins. For a sparkling version, that base wine typically undergoes a second fermentation, whether through the traditional method or in tank, to build natural carbonation while preserving freshness. Because these wines rarely see oak, the focus stays on bright fruit and lively acidity rather than added spice or structure.
Wines of this style generally show a deep pink to ruby hue, with aromas and flavors centered on red berries, cherry, and a touch of citrus, carried by a crisp, refreshing finish and fine, persistent bubbles. It's a versatile match for lighter fare like grilled vegetables, charcuterie, or simple seafood dishes.
