Perse Latitudes

In the 1990s, Gérard Perse left the world of mass retail to pursue his passion for wine. In Saint-Émilion, he acquired Château Pavie, Château Monbousquet and Clos Lunelles, before transforming the former Hostellerie de Plaisance into Hôtel de Pavie, home to the two-Michelin-starred La Table de Pavie, led in collaboration with Yannick Alléno.

Château Pavie, Saint-Émilion Premier Grand Cru Classé A

Acquired by the Perse family in 1998, Château Pavie underwent a remarkable renaissance. Gérard Perse elevated this historic estate, whose origins date back to the 4th century, to the very summit of Saint-Émilion, culminating in its promotion to Premier Grand Cru Classé A in 2012. Set between limestone plateau and mid-slope vineyards, Pavie draws its distinctive identity from a mosaic of exceptional terroirs, crafting precise, elegant wines with remarkable freshness and vibrancy.

The 2025 vintage :

The 2025 vintage at Château Pavie reflects a hot, dry growing season, marked by challenging climatic episodes yet conducive to excellent vine health. Thanks to the terroir’s natural capacity for regulation and precise management of ripeness, the wine achieves a rare balance between richness, concentration, tension and finesse. For the first time as the majority variety, Cabernet Franc plays a central role in the wine’s harmony, bringing both intensity and freshness. This vintage continues the work initiated by Gérard Perse in pursuit of purity and precision.

96-98 Points
"The 2025 Pavie is a total stunner. What a wine. Rich and dazzling in its intensity, the 2025 hits all the right notes. Inky dark red/purplish fruit, exotic spice, mocha, espresso and pomegranate literally stain the palate. The 2025 is going to require the better part of a decade to unwind, but it has a ton of potential and a very bright future. This is the first time Cabernet Franc is the dominant variety in the Grand Vin. The 2025 has plenty of the textural intensity readers have come to expect, but with less of the heavy extraction that marked the earlier years"
