Filipa Pato grew up in Bairrada as the daughter of Luís Pato, the winemaker credited with raising Baga’s reputation. She trained in chemical engineering at the University of Coimbra and worked harvests in Bordeaux, Mendoza, and Margaret River before returning home. Based in Óis do Barro with her partner William Wouters, she makes unmasked, place-driven wines and aims to make Bairrada popular again.

DNMC, short for Dinâmica, is a biodynamic Baga sourced partly from the couple’s estate vineyards and partly from growers on limestone soils across Bairrada. The vines are a mix of bush and trellised plantings averaging around 40 years, with younger plants propagated by massal selection from old vines. Fruit is handpicked, partly whole cluster, then fermented and raised entirely in tank. Extraction is very gentle, with a long four-week maceration that builds fine, firm structure without heaviness.

Perfumed wild plum and tayberry mingle with crushed purple flowers and scrubby wild herbs. Blackcurrant and pink peppercorn add lift on a slender, lively frame. Lithe, downy tannins lead to a long, saline finish with a stony, limestone edge. Fresh, light, and charming, it shows Baga at its most graceful.
